Garlic and Herb Butter Salmon

I’ve had a couple of late nights this week but still been getting up at 5am to do CrossFit – yes I am slightly obsessed, it may have been mentioned already. The end result, by this evening, was grumpiness and a general feeling of not being arsed to do anything except come home from work and watch telly. So I cooked this.

This is probably one of the easiest recipes in the world… ever.  And seriously tasty!  The flavours are really simple – yummy garlic, some herbs, grass-fed butter and freshly ground black pepper.  It takes less than 20 minutes to prepare and cook, so even on days when you feel extra tired or lazy there’s no excuse.  Serve with a salad or some lightly stir fried veg – you can easily get those ready while the salmon is in the oven.

What you need (for 2 or 3 people):
3-4 salmon fillets
a slab of grass-fed butter
2 garlic cloves, finely chopped
a small handful of fresh herbs, or 2 tbsp of dried mixed herbs (I didn’t have any fresh left so I used dried today)
freshly ground black pepper
a sprinkling of salt

How to make it:
Preheat your oven to 180C.
Rinse the salmon fillets, pat dry with kitchen towel and place in an oven-proof dish.
Sprinkle with the chopped garlic, herbs, black pepper and salt.
Top each salmon fillet with a very generous knob of butter.
Place in the oven and cook uncovered for about 10 minutes (a bit more or less depending on how cooked you like it).
Serve and eat!
