I am completely addicted to tea. I can drink crazy amounts a day; in fact it’s not even 8am and I’m already on cup 2 (Earl Grey please, preferably Twinings, with a bit of milk). This recipe came about when I was looking for something caffeine-free to drink in the evening. It’s a little bit more effort than making a cup of tea, but worth it!
A bit of a watch out on your almond milk – sugar and stabilisers creep in all over the shop so I recommend you read the ingredients carefully and make sure you’re happy with what you’re buying. You could also make your own (recipe here) so you know exactly what’s in it, or just use another kind of milk.
I’ve not put any amounts of spices because it’s a really subjective thing. It’s up to you and what you like! I tend to go a bit nutmeg crazy.
1 mug of almond milk, or milk of your choice (or more mugs, if you’ve got more people or are feeling greedy)
Spices of your choice: I normally go for a cinnamon stick, some grated nutmeg and some vanilla extract – for 2 cups its 1 stick, 1/2 a tsp of nutmeg and a few drops of vanilla.
Place your milk in a small saucepan. Add spices – if you’re using cinnamon sticks or vanilla pods they can go in whole, otherwise just put in the ground stuff and give it a good stir. Add the honey if you’re using it.
Heat slowly over a medium to low heat and simmer gently for few minutes – a little longer if you’re using whole spices. Taste it, adjust the spices if necessary, and then you’re all good to go!
I suspect that if you had a microwave this could be even easier. I don’t have one so have no idea. Please let me know if you try it!
