I thought these were really yummy and would be a nice breakfast treat at the weekend. The only problem was that the blueberries kept falling out when I flipped the pancakes. If you find a way to fix this problem let me know!
What you need:
100g blueberries (approximately, a bit more or less won’t matter too much)
2 tbsp ground almonds
1 tbsp coconut flour
1 tsp vanilla extract
½ tsp cinnamon
½ tsp baking powder
coconut oil for frying
How to make it:
Wash the nectarine, chop roughly and remove the stone and put into your food processor.
Add the eggs, ground almonds, coconut flour, vanilla extract, cinnamon and baking powder.
Blend until the mixture is smooth.
Gently mix in the blueberries so they don’t get destroyed.
Add a spoonful of coconut oil to your frying pan and heat.
When the oil is hot pour in small batches of the batter.
Turn the heat down to medium, and when the pancake starts to bubble on top flip it over (this was when some of the blueberries fell out!).
Add more coconut oil to the pan to cook the next batch.
I think these would probably be lovely served with a little unsweetened greek yoghurt or coconut milk.
