Easy Lemon Sole with Cherry Tomatoes and Olives

This is one of the things I cook when I am feeling really lazy or have very little time. Usually it’s just laziness. The bonus is that it tastes good (we think so anyway!) and you get extra time to watch telly, or maybe just have an early night. Sleeping is awesome.

This served two of us because we are greedy and eat lots, but it might stretch to 3 people.

What you need:
500g lemon sole fillets (approx)
1 tbsp mild and light olive oil
freshly squeezed juice of 1 lemon
rind of 1 lemon
2 cloves garlic, sliced
small handful of parsley finely chopped, or 1 tbsp dried parsley
8-10 cherry tomatoes, halved
handful of queen olives, halved

How to make it:
Preheat your oven to 180C (have you noticed how almost everything is cooked at this temperature!)
Lightly oil an oven tray.
Wash and dry the lemon sole fillets and place in the oven tray.
Mix the olive oil and lemon juice together and pour over the fillets.
Grind some black pepper over the fillets.
Sprinkle on the sliced garlic, lemon rind and parsley.
Throw the cherry tomatoes and olives over the fish.
Place in the oven and bake for 8-10 minutes.  The fish will flake easily when it is cooked.
Serve immediately.

I think these are lovely served with steamed green beans.
