I was going to make carrot and swede mash, then decided that as we were having fish I needed chips to go with it. So I made these.
What you need (this serves 2 people):
1 medium swede
1 tsp paprika
handful of fresh parsley, finely chopped (or 1-2 tbsp dried parsley)
freshly ground black pepper
How to make them:
Preheat your oven to 180C.
Chop the swede into chip shapes.
Place the chips in a bowl and add a little olive oil and the herbs and seasoning.
Shake or stir to coat the chips.
Transfer to an oven tray and place in the oven for 35-40 minutes.
Turn half way through cooking to ensure they are crispy on all sides.
Serve with anything you like!
