If you are a coconut fan (me! me! me!) you will love these cookies. Unless you don’t like banana, in which case you won’t like them at all. I could eat coconut in all its forms all day, I could bath in coconut and sleep on it, it is just that awesome.
What you need:
100g unsweetened desiccated coconut
1 large or 2 small ripe bananas
1-2 tbsp of honey (depending on how sweet you want it, or you can leave this out if you are happy with the natural sweetness from the banana)
handful of pumpkin seeds
handful of untoasted flaked almonds
How to make them:
You can make these as bars or cookies, your choice. If making bars, line a small square tin with greaseproof paper and rub with a little oil. If making cookies, place a piece of greaseproof paper on a baking sheet.
Preheat your oven to 180C.
Mash the bananas and put them in a large bowl.
Lightly beat the egg and add to the bananas.
Add the honey (if using) and desiccated coconut and mix thoroughly.
Throw in the pumpkin seeds and flaked almonds and mix again.
Press the mixture into your lined and greased tin if making bars. Or shape into cookies and place on the baking sheet.
Bake for 12-15 minutes until just turning brown.
Remove from the oven and allow to cool.
Cut into bars if you need to.
You can refrigerate these and they will be fine for a few days.
These are really awesome as a pre- or post-workout snack, or take some with you if you’re out climbing big hills like we do. They’re a great energy boost!
