Apple and Lime Jelly Bites

I feel a bit guilty about these. Completely within the rules (gelatine is ok, right?) but totally against the spirit of paleo! Yes I’ve given them a fancy name, but really this is just a paleo Tangfastic….


3 sour apples (mine were Granny Smiths)

2 limes

6 sheets of gelatine

Get the juice out of your fruit. Limes are easy, but apples are a bit trickier if you don’t have a juicer. I grated them, then bundled them in a bit of muslin and squeezed.

Soak your gelatine in cold water for about 5 minutes or as the pack directs. Heat both juices in a saucepan until hot but not boiling, and remove from the heat. Squeeze the excess water out of the gelatine sheets and add to the juice. Stir until dissolved.

Line a dish with cling film – something about 20cm square would be about right – and pour in the jelly mixture. Allow to cool, then place in the fridge until set. To speed things up you can pop in the freezer for a bit!

When it’s firm, cut into squares/diamonds/triangles (or use a small cookie cutter if you’re after something a bit more adventurous). And you’re ready to go! Store in the fridge if you’re able to resist wolfing the whole lot down in one go….

Annoyingly I can’t help but feel these would be a bit tastier with a glug of gin.

    1. Yes they’re really tasty! You might want to make a double batch as they go quite quickly…
