Spicy Roasted Sweet Potato and Carrot

A yummy side dish with some great flavours!

What you need:
2 large sweet potatoes, diced
3 medium carrots, diced
1 red chilli, deseeded and sliced
1 fennel bulb, sliced
3 tbsp olive oil
1 tbsp cumin seeds
freshly ground black pepper
4 garlic cloves, whole and unpeeled

How to make it:
Preheat your oven to 180C.
Heat the oil in a saucepan and add the cumin seeds. Cook for about a minute.
While the cumin seeds are cooking, place the chopped sweet potato, carrots, fennel and chilli in a roasting pan.
Add the garlic cloves.
Take the olive oil and cumin seeds off the heat and pour over the sweet potato and carrot mix.
Sprinkle on the black pepper.
Stir well so that all the vegetables are coated in olive oil.
Place in the oven for 30-40 minutes.
Serve and eat it up!
