Ok, so first of all I have to share this quote with you:

That’s from my friend Lambert (I didn’t even bother to ask where he got it from!). This is the kind of sh*t I have to listen to at 7am when I turn up to do my WOD. It nearly made me cry this morning, after I had stopped laughing.
Back to serious stuff! There are a couple of websites out there with really awesome paleo granola recipes. I’ve made this one with all my favourite nuts plus dates. I love dates. Shame they are not the best choice of paleo food I could be eating.
What you need:
100g raw flaked almonds
100g pecans, halved
50g pine nuts
30g pumpkin seeds
50g desiccated coconut
1 tbsp honey
1 tbsp coconut oil
1 tsp vanilla extract
1 tsp cinnamon
100g dates, roughly chopped
How to make it:
Preheat your oven to 170C
Line an oven tray with greaseproof paper
Place the nuts, pumpkin seeds and desiccated coconut in a bowl and mix well.
In a small saucepan, gently heat the honey, coconut oil, cinnamon and vanilla extract until they are well combined. Don’t overheat!
Stir this into the nut mixture so it is all thoroughly coated.
Pour into the lined baking tray and place in the oven for about 15 minutes. It may need a bit more time, but the nuts will be a lovely golden colour when cooked.
Stir in the dates.
Allow to cool and store in an airtight container.
This is very awesome for breakfast, served with almond or coconut milk. Yummy!
