I love the texture of these, and they’re great for hot sticky weather! It’s hard to give quantities as it really depends on your ice lolly mold, so I’ve based it on 1 can of coconut milk. Scale as required (no Crossfit pun intended!)
1 can coconut milk (400g)
50g desiccated coconut
Very easy – mix ingredients together, pour into mold. The amount of honey depends on how sweet you want it, but bear in mind it’ll seem a bit less sweet when it’s frozen.
I think these would be good with blended fruit. Mango or strawberry perhaps? I might give this a go. If you get in there before me, let me know how it goes!
Oh, and I got my mold from the 99p shop. Bargain!
