Coleslaw

Summer is finally here, it’s BBQ time, and that means we need coleslaw!

Here’s what you need for this paleo version:

1 large carrot, grated
½ raw white cabbage, grated
1 red onion, grated
30ml coconut milk
2 tbsp wholegrain mustard
freshly squeezed juice of ½ a lemon

How to make it:
Combine the grated carrot, cabbage and onion so they are well mixed.
In a small bowl, thoroughly mix the coconut milk with the lemon juice and wholegrain mustard.
Add this to the vegetables and stir until they are well coated.
