Carrot and Beetroot Salad

I’m a little late posting today’s lunch, but it tasted amazing so I have to share it with you.  I think partly why it tasted so good was to do with the fact that it was almost 2pm by the time I got to eat it and I had just finished a two hour olympic lifting workout, so I was seriously hungry!

This would also be a great side salad with your evening meal.

Here’s what went into it:
1 raw beetroot, grated
1 carrot, grated
¼ white cabbage, grated
handful of cherry tomatoes, halved
handful of torn baby spinach leaves

How I made it:
Throw everything into a tub and mix together.
Add some extra virgin olive oil.
Squeeze in the juice of half an orange (or lemon if you prefer).
Sprinkle with a little salt and freshly ground black pepper.

I also added some of last night’s leftover roast duck, but chicken would also work really well.  Oh yes, I’ll post the roast duck recipe soon!
