Vanilla Fig Cookies

Who doesn’t love cookies??  These are made with partially rehydrated dried figs so they’re not too sweet, and they are perfect for breakfast or as a snack.

What you need:
100g slivered blanched almonds
100g brazil nuts
50g desiccated coconut
2tsp vanilla extract
250g partially rehydrated dried figs (I used Sainsburys “Taste the Difference” ready to eat figs)
2 eggs

How to make them:
Finely chop the almonds, brazil nuts and figs in your food processor.
Add the desiccated coconut and eggs and mix throoughly.
Shape into cookies, or press into a baking tray.
Bake at 180C for about 15 minutes.  The cookies will be golden brown when cooked.
