This is definitely a very quick and easy dinner for days when you are feeling extra lazy! The preparation and cooking took less than 20 minutes… more time to watch telly and sleep.
4 lemon sole fillets
3 tbsp ground almonds
1 tbsp finely chopped fresh parsley or dried parsley
1/4 tsp freshly grated nutmeg
Freshly ground black pepper
Freshly squeezed juice of half a lemon
How to make it:
Preheat your oven to 180C.
Lay the lemon sole fillets in an oven-proof tray. Brush both sides with olive oil, and pour the lemon juice over the top.
In a small bowl thoroughly mix together the ground almonds, paprika, nutmeg, parsley, salt and pepper.
Sprinkle the seasoning over the top of the fillets.
Bake uncovered in the oven for 8-10 minutes. So easy and very yummy!
