Crispy Herb Chicken

I saw this mix of spices on a jar of seasoning in the supermarket and thought I would make my own Paleo version with herbs and ground almonds.  It turned out surprisingly well (I have to admit I’m still always surprised when anything I have made up actually tastes good!).

Ingredients (serves 2):
2 chicken breasts ( although the seasoning would also work well with chicken wings)
1/4 tsp freshly grated nutmeg
1/2 tsp chilli flakes
1 tsp paprika
1 tbsp mixed dried herbs
2 tbsp ground almonds
Sea salt and freshly ground black pepper
1 egg
1 tbsp olive oil

How to make it:
Preheat your oven to 180C.
In a small bowl, combine the nutmeg, chilli flakes, paprika, mixed herbs, ground almonds, salt and pepper.
In another bowl, lightly beat the egg.
Cut the chicken into strips and first coat with olive oil and then the beaten egg.
Add the chicken to the seasoning mix and stir well until it is thoroughly coated.
Place the chicken in an oven proof dish and bake uncovered for about 20 minutes.  Alternatively you can grill the chicken under a medium grill.
