Quick Lunch Vegetables

I don’t have much time in the morning as I have to be at CrossFit by 7am and I like to sleep for as long as possible!  This is a quick and easy lunch as it usually takes me about 5 minutes to chop the vegetables and a few more minutes to lightly stir-fry them in a little oil. Then I can throw in some form of meat or fish and have a filling lunch. The only down side is that I have to eat the vegetables cold, but I don’t mind that at all, and they are more substantial than just a salad.

Here’s a lunchbox with broccoli, carrot, courgette, red onion and smoked peppered mackerel.
