Baked Sea Bass with Lime and Ginger

I made this after walking past a fishmonger in Borough Market and seeing some amazing looking sea bass. 
Ingredients (serves 4):
4 Sea Bass Fillets
1 lemongrass stalk, chopped into 5 or 6 pieces
3 cloves  of garlic
2 inch piece of ginger
2 medium red chillies
2 limes
1 tsp honey
2 tbsp olive oil

What to do with it: 
Preheat oven to 180C.
Put the lemongrass, garlic, ginger and chillies in a food processor, add the honey and olive oil and squeeze in the juice of 1 lime.  Whiz together until mixed, I didn’t blend this too finely so there were obvious bits of chilli and garlic in it.
Wash the fish, pat dry with a kitchen towel and place in a big piece of foil in a baking tray.  The foil should be big enough to wrap the fish.
Sprinkle with a little salt.
Pour the seasoning mix over the fish.
Slice the other lime and arrange the slices on top of the fish.
Loosely wrap the fish in the foil and bake for 15 minutes.

Remove from the oven and leave wrapped in foil for 5 minutes before serving.
