This is my version with bits from both of the above:
200g of any berries (I used frozen mixed berries as we already ate all the fresh ones today)
150g ground almonds
2 tbsp almond oil
1 tsp vanilla extract
1 tsp cinnamon
3 tbsp honey
juice of ½ lemon
How to make it:
Preheat the oven to 180C.
Put the berries in an ovenproof dish (you don’t need to defrost frozen berries).
Add 2 tbsp of honey, lemon juice and cinnamon to a pan and heat very gently to thoroughly mix all the ingredients. Don’t let it boil.
Pour the mixture over the berries and stir.
To make the crumble topping:
Lightly beat the egg.
Place the ground almonds, almond oil, vanilla extract, 1 tbsp of honey and beaten egg in a bowl and mix together. It wasn’t very “crumbly”, more of a stodgy looking dough.
“Crumble” this over the top of the berries.
Bake in the oven until the top is lightly browned. This took about 35 minutes in my oven.
It actually tasted like a “real” dessert and I would happily serve this to my non-paleo friends!
