Officially the best food ever. These are far superior if cooked on the BBQ, but if you are suffering from lack of facilities or weather, they will taste just fine if you cook them in the oven but tend to fall apart a bit.
You will need…
1 rack of ribs per person, or enough individual ribs. Waitrose sell racks!
BBQ marinade (enough for roughly 2 racks)
1 tbsp honey or maple syrup
2 tbsp tomato purée
1 tbsp soy sauce (not paleo – use extra salt)
1 tbsp white vinegar
A few dashes of Tobasco
Approx 250ml meat stock, or 1/2 a stock cube and hot water
Mix marinate ingredients, and pour over ribs. Cover, refrigerate and leave for 4 hours or ideally overnight.
To cook on the BBQ, follow instructions here (http://www.simplyrecipes.com/recipes/how_to_turn_your_kettle_grill_into_a_smoker/) and cook for 2-4 hours, basting in leftover marinade every 30 mins or so.
To oven cook, leave the ribs in their marinade and covered (tin foil will be fine) and place in the oven at 150c for 2-3 hours, turning once during cooking. Uncover, remove most of the remaining liquid and cook for a further 30-45mins at 200c until the outside is crispy, again turning once during cooking to make sure both sides are browned. Cover ribs with marinade for final 5 mins cooking time.
