Simple Roasted Vegetables

Roasted vegetables are so easy to prepare and cook. Here’s how I do them.
 
This amount of veg is enough for 2 people to accompany your meat or fish main course.
 
What you need:
1 Courgette
1 Sweet Pepper (red and yellow peppers give the vegetables a lovely colour)
1 Red onion
Small head of Broccoli
5-6 Chestnut mushrooms (or any mushrooms of your choice)
3-4 cloves of garlic, unpeeled
2 tbsp Olive Oil
Freshly ground black pepper
 
What to do with them:
Preheat the oven to 180C.
Chop the vegetables and place in a baking tray. Throw in the garlic cloves whole and unpeeled.
Pour olive oil over the vegetables and sprinkle with the ground black pepper.
Stir the vegetables to coat them all evenly with olive oil.
Place in the oven for approximately 25 minutes.
 
I especially love the roasted garlic in these vegetables, it goes all squidgy inside the peel and tastes amazing!
